7 Healthy & Quick Lunch Ideas

Hey hey,

I thought I would share with you all what Ive been having for lunch over the past few days. I always find it hard to come up with healthy but filling lunch ideas so hopefully this will help some of you out

Friday
Homemade falafel, cucumber sticks, tomato and coriander salad, mayo and a green smoothies (in disguise)
Ohhh the falafel...yummm. Apart from being a bitch to blend it was super easy to make. I literally thew all the ingredients into a blender and VoilĂ . All hail the chickpea!

Saturday
Mackerel, parsley and spinach sandwich with Arizona Green Tea. 
Quick, Simple, healthy and you get yourself a pretty Arizona Green Tea bottle. Need I say any more? If you're not a fan of fish you could always substitute it for ham or humous.

Sunday
Falafel, sweet potato and lamb (left over from dinner) and some apple slices.
Sundays lunch mostly consisted of felt overs from meals during the week. Lunch is always a good way to clear up left overs from dinner.

Monday
Kale, sweetcorn, parsley and red onion salad.
This was a spur of the moment lunch. Had no idea what I was doing, just throwing it all in the frying pan going crazy! Add a sprinkle of grounded coriander, curry powder and mustard seeds and Bobs your uncle. You've got yourself a delicious kale salad.

Tuesday
Roasted brussel sprouts, salad, humous, chickpea curry, sharon fruit chutney and some rice.
On Tuesdays I volunteer in a community cafe which always cooks up the most delicious vegetarian food! This was an assortment of things we cooked. 

Wednesday
Watermelon and an apple decoder and slices with peanut butter and raisins in-between.
I had a massive breakfast so wasn't feeling too hungry come lunch so I opted for some fruit, putting a little twist on the apple. My sisters exact words were 'what have you done to that poor apple' 

Thursday
Bacon, frankfurters, lettuce and parsley sandwich with cucumber slices and an apple.
Definitely had the meat munchies. I was going to for a BLT but we didn't have any tomatoes so substituted them for frankfurters as you do.

Hope this has inspired some of you to make your own lunches or possibly to try something new.
