Banana and Peanut Butter Cupcakes

Hi All,

Today I thought I would try something different, baking. 


 First of all you will need the following ingredients:
2 eggs
2 ripe bananas, mashes
1tbsp baking powder
115g peanut butter
75g brow sugar (I had to use caster as I had no brown, sad times)
25g oats
250g self raising flour 
50g melted butter
250ml milk


Mix together the flour, oats and baking powder in one bowl, and in another bowl mix together the rest of the ingredients, eggs, sugar, mashed banana, peanut butter and lastly the melted butter


Gradually mix the two contents of bowls together


 folding the mixture in after every pour 


Once everything has been mixed together, it should look something like this


Place some muffing/cupcake cases in a muffing tin and begin to fill them with about one and half table spoons of mixture 



While the muffins are in the oven begin to make the vinilla buttercream icing. To do this you will need:

1 1/2 cups of icing sugar
1/2 cup of butter (at room temperature)


Add in vinilla extract for a vinilla taste, but you can use any extract flavouring you with 


Wait for them to cool down by placing them on a cooling rack. Once they have cooled down begin to spread the icing on, I used a butter knife to do this.


Sprinkle a little bit of cinnamon powder over the top (not too much or it may accidentally turn into a remake of the cinnamon challenge).


Top the cupcakes with two pieces of banana, I would recommend using dried banana chips but I had none available so used banana slices.
